Avocados! If I could, I would eat one everyday! There are so many health benefits and they taste like heaven. :) Did you know that avocados reduce risk of heart disease? Everyone wants a healthy heart. Right?! The best part is that avocados are fat-burners and by adding it to certain foods, you can improve your nutrient absorption up to 400%! Try and add in avocados to your diet, despite how much “fat” people say it has. They do more good than harm. Trust me!
Here is a simple recipe I created at lunch today, that took about 10 minutes to prepare:
1 cup quinoa - cooked
2 tsp olive oil
1/2 cup spinach
1 garlic clove
2 tbsp nutritional yeast
pinch of salt, pinch of cayenne pepper
Keep in mind this recipe was prepared for one (me). Feel free to double, triple, quadruple recipe to feed your family, friends, coworkers, pets, etc. !
Toss all ingredients (except avocado) into a frying pan & saute until spinach cooks down. Cut open an avocado, remove pit, carve out a little deeper hole into your avocado to fit more quinoa, fill avocado with your yummy quinoa & pig out! Oh!! If you’re a fan of spicy foods, drizzle a little hot sauce over it. Enjoy! xo
