Raw Banana Cream Pie-
Rather than making an actual “pie”, I made mine into squares by using a square muffin tin. Be creative. Take this recipe and do what your heart desires. It’ll be delicious no matter what size or shape!
Crust-
-10 prunes (dried/pitted)
-1 cup raw sunflower seeds
-1/2 cup shredded coconut
-couple pinches of sea salt
Mix ingredients in a food processor and set aside.
Banana cream filling-
-2 bananas
-handful of walnuts
-3 tbsp almond butter or peanut butter (unsalted)
-pinch of cinnamon
-1/2 cup coconut milk
-4 tbsp plain coconut milk yogurt
Mix ingredients in a food processor, separate from crust mixture.
In my muffin tin, I equally distributed my crust mixture into each square and packed the crust down tightly with a spoon. I then poured my banana cream on top of each crusted square, filling each one to the tippy top.
I placed the muffin tin in the freezer and patiently waited for my mini pies to set. I made these at night, so in the morning, they were the very first thing I thought of. I was SUPER excited to see how they turned out and even more excited when I discovered how incredible they tasted! I let them thaw just a tad so they weren’t so hard. I’d recommend waiting about 5-10 mins before sinking your teeth in. I hope you enjoy them as much as I did!! Xo
