It’s as simple as cake! 

Mix together in a food processor- 
-2 cups shredded carrots
-1 cup pitted dates 
-1/4 tsp or tiny sliver of ginger
-1 cup coconut flakes 
-1/2 tsp cinnamon 

Separately, mix together in food processor- 
-1 1/2 cup soaked cashews
-1/2 cup flax milk 
-3 tbsp agave 
-1/2 tsp vanilla 

In a baking dish, lined with parchment paper, fill bottom with carrot mixture. Pour cashew cream over the top, cover and place in freezer for a couple hours or overnight. Take out and thaw for about 5-10 mins before indulging in this deliciousness! I’d love feedback on this. Let me know what you think. Xo
